Chicken
Curry
Ingredients
500g (17.5 oz) chicken thigh, cubed 2 tsp peanut oil
1 onion, sliced 1 red bell pepper, thick slices
1 tsp garlic, minced 1 tsp ginger, crushed
1 tsp red chili flakes 2 tsp brown sugar
1 Tbsp soy sauce 6 Tbsp peanut butter
½ cup coconut milk ½ cup chicken stock
Method
Prep: 15min › Cook: 8hr › Ready in: 8hr 15min
Add all of the ingredients into the slow cooker and mix slightly.
Cover and cook on Low for around 8 hours.
Season to taste and serve with rice or bread of your choice .
