Fresh Apple Cake

Ingredients:
Peeled diced apples: 4 cups Cinnamon: 2 teaspoons
All purpose flour: 2 cups Baking soda: 1 1/2 teaspoons
White sugar: 2 cups Salt: 3/4 teaspoon
Eggs: 2 Oil: 1/2 cup
Nutmeg: 1/4 teaspoon
Preparation:
1. Preheat the oven to 350F. Grease and flour a 9 inch round cake pan. The
side of the pan should be at least 3 inches because this cake does rise a
little.
2. Mix all the ingredients together except the apples, really well. Lastly add
the diced apples and mix well. Pour the batter into the prepared pan and
bake for 45 mins. Check your cake for doneness by testing with a toothpick
or skewer, which should come out clean.
3. The crust is a beautiful deep caramel color and is slightly crunchy.
