Romanian Meatball Soup

    Ingredients



    Soup:
                                                       Directions
    2 tbsp olive oil
                                                         1. In pan, over medium heat, sauté peppers and
    3 medium carrots diced                                 carrots until soft, add ketchup and stir slowly.

    Meatballs:                                             to taste.
                                                         5. Serve in a bowl garnished with sour cream and
    1/2 lb ground beef                                     parsley on top.


    1 cup rice (rinsed 3 times)


    1 medium onion (diced)


    1 egg


    salt and pepper to taste
