Pumpkin Pancakes                 Directions



      8 servings                      1. Mix wet ingredients in a bowl.
                                     2. In a separate bowl, mix dry
      30 minutes
                                        ingredients.
   Ingredients                        3. Combine into one bowl. Mix well,
                                        but do not overmix.
   1 1/4 cups flour                  4. Spray griddle or pan on the stove
                                        with non-stick cooking spray, and
   1 1/4 cups buttermilk                add a dollop of mix sized to your
   1 egg                                liking for each pancake.
   1 tsp baking soda                  5. Flip to desired doneness and serve
                                        with favorite pancake toppings
   1 tsp baking powder                  (see suggestions) and enjoy!
   1/4 cup sugar
   1/4 cup vegetable oil            Notes
                                    Pancakes are a weekend favorite in our
   1/3 cup pumpkin puree            house, but I only do my Pumpkin Pancakes
   1 tsp pumpkin pie spice          during the holiday season for a little extra
                                    special touch during this magical time.
   optional toppings: real
   maple syrup, chopped
   pecans, chocolate chips
