Tembleque                  Directions

   (Coconut Pudding)
                                      1. Stir together all ingredients in a

      6 servings                        saucepan and bring to a boil over
                                        medium heat stirring constantly.
      3 hours                        2. Cook until smooth and thick.
                                      3. Place in a shallow mold, let it cool
   Ingredients                       4. and refrigerate for at least 3 hours.
                                        Garnish top with cinnamon before
                                        serving. Buen Provecho!
   4 1/2 cups coconut milk
   3/4 cups corn starch
   3/4 cup sugar                    Notes

   1 tsp pure vanilla extract       It was my mother’s favorite dessert, and it
                                    reminds me of her.  It also feels like home
   1/2 tsp salt                     when spending the Holidays away from my
                                    family.
