                                 SCHELLAC OR NOT SCHELLAC

            "Everything  about  pigs  is  good"  was  the  claim  made  in  advertisements  in  the  20th
            century.  So  we  lived  through  the  years  of  plenty,  only  in  Europe,  when  all  the
            advertising encouraged us to eat more... always more.

            But sometimes life has a funny way of doing things. We are now closely following the
            crusade  (for  it  is  indeed  a  crusade)  of  vegans  and  anti-speciesists  who  would  like  a
            world  without  animal  protein.  Personally,  I  don't  mind  as  long  as  I'm  free  to  poison
            myself with a good steak. However, I find it a bit "fort de Roquefort" that they don't hunt
            down the additives of animal origin that slip into food without being mentioned.

            1  Shellac, or shellac in Canada, is a laqu e derived from the secretion of an Asian mealy bug,
            Kerria lacca. Shellac is edible and is used as a wax on candies and pills. Its alkaline properties
            make  it  interesting  for  protecting  a  medicine  during  transit  through  the  digestive  tract  and
            releasing  the  active  ingredient  at  the  right  place  (in  the  small  intestine  or  colon)13.  In
            agriculture,  it  is  used  to  protect  apples  that  lose  their  natural  wax  during  harvesting  and
            cleaning14. As such, it is coded E904 as a food additive15. Vegans avoid this product as it is of
            animal origin.
            Shellac can be a contact allergen. Symptoms are skin irritation
