     Method
 Add the boiling water to the dried fruit and allow to soak overnight.
 Remove the tea bags from the fruit and strain the fruit making sure to keep all the liquid.
 Mix all the dry ingredients together along with the beaten egg and soaked fruit.
 Start to add the liquid slowly. This is best done on a mixing machine if you have one or if not a plastic spatular.
 Once the liquid has been added the mix will look like a thick custard.
 Transfer this to a greased loaf tin, or if you do not have a loaf tin a 1⁄2 gastronorm tray will do.
 Bake Gas 2/160°C for 1 hour and 20 minutes or until cooked through.
 Allow to cool for 10 minutes in the tin or tray before turning onto a wire rack and fully cooling.
