 Preheat the oven to Gas 3/180°C. Grease a baking tray.
 Place all the ingredients into a bowl and mix until smooth.
 Press the mixture into the baking tray and prick with a fork.
 Bake in the preheated oven until golden, around 20 to 25 minutes.
 With the remaining lemons squeeze the juice into a small bowl and add the icing sugar. Drizzle this lightly over the shortbread and serve.
