Method
Place joint in lightly greased tin and place in pre-heated oven.
Cook for approximately 11⁄2 to 2 hours.
Add Yorkshire puddings to tins and bake for approximately 10 minutes on Gas 4/180°C.
Test the meat is cooked by probing, a core temperature of 75°C to be reached or 30 seconds and juices running clear.
Allow meat to rest, covered, for 10 minutes before carving.
Slice and arrange meat with Yorkshire puddings in a serving dish, moisten with stock and cover with lid, keep hot until service.
