                         2 eggs                                   In a small bowl, whisk together eggs, and milk.

                 2 tablespoons milk                                          Stir in flour and cornmeal.
             1/4 cup white whole wheat                       Mix in the corn, cauliflower, shallot, scallions, and basil.

            flour (or flour of your choice)                              Chill for 5-10 minutes to thicken.
                  1/4 cup cornmeal                           Heat olive oil in a nonstick pack over medium-high heat.
                   1 can sweet corn                                     Drop ¼ cup of batter into the pan.

           2 cups cauliflower rice, gently                              Cook both sides until golden brown.
                        steamed                                Remove fritters from pan and place on a paper towel.
               1 small shallot, minced                            Repeat with the remaining batter.  Serve warm.
