Cilantro Lime Chicken














           This easy dish is a fun and bright way to celebrate summer and cilantro! Serve

                       with any desired side dishes for an easy and delicious meal.


        Ingredients:                                           Place the chicken thighs in a shallow pan
        2 tbsp olive oil                                       or in a ziploc bag with the marinade and

        4 cloves garlic, minced                                toss to coat. Marinate for 30 minutes or
        1/2 tsp cumin                                          up to 8 hours in the fridge.
        1/2 tsp salt

        Fresh cracked pepper                                   When ready to cook, heat a large skillet
        2 limes, sliced into wedges                            over medium-high heat. Add the chicken

        1/2 bunch cilantro                                     once hot and cook 5-7 minutes each side.
        6 boneless, skinless chicken thighs                    Add extra marinade as needed.



        Instructions:                                          Top the chicken with more fresh cilantro
                                                               if desired, and lime wedges.
