Cooking for Healing: Healthy Holidays






















       Radicchio, Bean, and




                                     Feta Salad

            This is a fairly simple and delicious salad that will lighten up the heavy
                                                   holiday dinners!


        Ingredients                                            garlic while stirring.
        1 lemon

        4 smashed garlic cloves                                Remove the pan from the heat and stir in
        1/4 tsp red pepper flakes                              the beans, lemon juice and salt. Season
        1/2 cup extra virgin olive oil                         with black pepper, and toss.

        2 cans white beans, such as cannelini
        1.5 tsp kosher salt                                    While the mixture is sitting, toast the

        1/4 cup raw pistachios                                 pistachios in a dry pan over medium heat
        1 head radicchio, sliced thin                          until golden brown. Roughly chop.
        1/2 cup chopped fresh dill

        8 oz. feta cheese                                      Add the mixture, the radiccio and 1/4 cup
                                                               of dill in a large bowl. Crumble in the feta

        Instructions                                           and toss to combine.
        Zest the lemon in wide strips, avoiding the
        pith. Juice the lemon and remove seeds.                Serve topped with pistachios and dill.
