Donna’s Cheesecake Cupcakes
Makes 2 Dozen
3 packages (8oz.) Cream Cheese, (room temperature)
1 cup sugar
5 eggs
1‐1/2 teaspoon vanilla for cupcakes
1 container (8oz.) sour cream
1/4 cup sugar
1 teaspoon vanilla for filling
Fruit if desired
1. Preheat oven to 300 degrees.
2. Mix cream cheese and 1 cup sugar very well.
3. Add eggs one at a time and mix after each.
4. Add 1‐1/2 teaspoons vanilla and mix well.
5. Fill up cupcakes 2/3 full and bake in oven for 40 minutes.
6. Take out of oven and cool for 5 minutes.
7. Mix together sour cream, 1/4 cup sugar and 1 teaspoon vanilla.
8. Put 1 tablespoon of this mixture on cupcakes and add fruit if de‐
sired.
9. Bake 5 minutes.
