Oatmeal Cake
“This is Steve’s Favorite Cake”
1 cup quick oats
1‐1/4 cup boiling water
1 stick butter
1 cup white sugar
1 teaspoon vanilla
1 teaspoon soda
1 cup brown sugar
2 eggs
1 teaspoon cinnamon
1‐1/3 cups flour
1. Mix oats and boiling water and let stand 20 minutes.
2. Mix remaining ingredients together, then add soaked oats.
3. Pour into ungreased 9 x 13 inch pan.
4. Bake at 350 degrees for 35 to 45 minutes or until done.
5. Cool and Frost.
Oatmeal Cake Frosting
2/3 cup brown sugar
1/4 cup cream
1/2 stick butter
1/2 teaspoon vanilla
Optional: 1 cup coconut or chopped pecans
1. Beat first 4 ingredients together. Add coconut or pecans if desired.
2. Spread on cake and put in warm oven to melt frosting a little.
