                                                Chicken Jambalaya

                                                           Serves 8

                                                   1 cup chopped onion

                                               1 cup chopped green pepper

                                                  2 cloves garlic (minced)

                                                  2 tablespoons salad oil


                                                  1 cup diced cooked ham

                                            12 small pork sausage links (sliced)

                                                1 cup diced cooked chicken

                                               2 cans tomatoes (16 oz. cans)

                                                    1 cup uncooked rice

                                                1‐1/2 cups chicken broth

                                                     1 teaspoon salt

                                               1 teaspoon chopped parsley

                                              1/2 teaspoon thyme (optional)



                      1.  Sauté onion, green pepper, and garlic in hot oil in a skillet until tender.

                      2.  Stir frequently.

                      3.  Stir in meats and cook for 5 minutes.

                      4.  Add all remaining ingredients and place in greased casserole dish.

                      5.  Cover dish and bake at 350 for 1 hour.
