                                                  Pecan Pralines

                                                    Makes about 2 dozen




                                                       3 cup sugar

                                                        1 cup milk
                                                     1/2 stick butter


                                                2 to 3 cups pecan halves





                    1. Measure 1 cup sugar in a black iron or heavy aluminum pot and caramelize.

                    2. At the same time bring milk and remaining 2 cups of sugar to a boil in a
                       saucepan.

                    3. Add milk mixture to caramelized sugar and cook together about two

                       minutes. (Be careful when adding milk to Caramel as mixture bubbles up.)

                    4. Remove from fire, add half stick butter and beat until melted.

                    5. Add 2 to 3 cups of pecans, continue beating until thick and ready to drop.

                    6. Drop by spoonsful onto wax paper.
