Swiss Onion Zucchini Bake
Serves 6
3 cups sliced onions
3 cups finely sliced zucchini
1/4 cup butter
2 eggs, beaten
1/4 cup milk
1 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon dry mustard
1 cup grated Swiss Cheese, divided
1. Sauté onions and zucchini in butter until soft.
2. Place onions and zucchini in casserole dish that is at least 1‐1/2 inches tall.
3. Combine eggs, milk, salt pepper, dry mustard and half of the cheese.
4. Pour egg mix over zucchini mixture.
5. Top with remaining 1/2 cup of cheese.
6. Bake at 375 degrees for 20 minutes or until firm.
