Spicy Chicken with Peanuts
Serves 2 but we usually increase the recipe
1 whole skinless, boneless chicken breast (1 pound)
1 tablespoon cornstarch
1/2 egg white
2 cups peanut oil to velvet the chicken

1/4 cup raw peanuts
3 tablespoons peanut oil

4 whole dried chili peppers
4 scallions, thinly sliced
3 cloves garlic, thinly sliced

Sauce ingredients
1 tablespoon chili paste with garlic
2 tablespoons dark soy sauce
1 teaspoon sugar
1‐1 /2 tablespoons Shaoxing wine or dry sherry
2 teaspoons red wine vinegar or cider vinegar
1 teaspoon sesame oil

To Thicken Sauce
1 teaspoon cornstarch mixed with 1 tablespoon chicken broth
