                                                     Nappa Salad




                                             Nappa Cabbage, finely chopped

                                                   8 green onions, diced

                                                  1/2 cups sesame seeds

                                                  1/2 cup almond slivers

                                     2 or more packages of Ramen Noodles, crushed

                                              Salad dressing (recipe follows)


                1.  Toast sesame seeds and almonds in a 400 degree oven for 7 to 10 minutes. Watch
                    carefully because they go from just right to burnt in a matter of seconds. I park a
                    chair in front of the oven and watch them the whole time!

                2.  Put cabbage and green onions in a large bowl and toss with dressing.

                3.  Just before serving toss in the toasted seeds, almonds, and the crushed ramen

                    noodles.

                                                  Nappa Salad Dressing

                                  1/4 cup plus 2 tablespoons of garlic red wine vinegar

                                                      1/2 cup olive oil

                                                3 tablespoons brown sugar


                                                     1/2 teaspoon salt
                                                1/4 teaspoon black pepper


                                        1/4 teaspoon cayenne pepper or to taste

                  1.  Place all ingredients in a mason jar and shake well.

                  2.  Refrigerate leftover dressing, and bring to room temperature before shaking

                     and using.
