                                                     One Pancake


                                   We made this often when Nathan was little and a very picky eater.
                             It contains 3 food groups and is easy to make. Sometimes that is as good as it gets.



                                                   1/4 cup ricotta cheese

                                                  1‐1/2 tablespoon flour


                                                           1 egg

                                                   Oil or butter for frying


                            1.  Mix all ingredients together to form a batter.

                            2.  Fry in hot oil or butter until bubbles form and pop, then turn
                               over and finish frying until done.


                            3.  Serve with your favorite pancake toppings.
