Basic Muffins


                                                 From Robin Layton



              Add your favorites to it and make it different each time! Chocolate chips, blueberries,
              cherries, whatever you love.


              2 cups, minus 2 tbsp, sifted all-purpose flour
              1 tbsp baking powder
              ½ tsp salt
              5 tbsp sugar
              1 egg
              1 cup milk
              4 tbsp melted butter



              Heat oven to 400. In large bowl, sift together flour, baking powder, salt and sugar. In
              another bowl, beat together egg, milk and melted butter. Pour the egg mixture into the
              flour mixture. Stir quickly and just enough to moisten the dry ingredients. Mix in your
              favorite addition of fruit or chocolate or nuts. Don’t overmix, the batter is OK lumpy. Fill
              greased muffin tins, bake 22 minutes or until golden brown.
