1 head of arugula or romaine lettuce, washed and sliced
8 cherry tomatoes, halved
2 green onions (scallions), sliced
8 oz (250 g) smoked salmon
4 large eggs, hard boiled, and sliced
2 large ripe avocadoes, sliced
TANGY DRESSING
¾ teaspoon salt
4 tablespoons balsamic vinegar
¼ red onion, finely minced
¼ teaspoon ground red chili pepper
1½ tablespoons soy sauce
2 teaspoons sugar
6 tablespoons olive oil
1 Arrange the arugula or lettuce on serving plates with the tomatoes, green onions, and
smoked salmon, placing the hardboiled egg slices and avocado slices on top.
2 To make the Tangy Dressing, whisk together the salt, balsamic vinegar, red onion,
chili pepper, soy sauce, sugar, and olive oil in a mixing bowl until thoroughly
combined. Drizzle evenly over the salads. Serve immediately.
