Sweet Grilled Calamari Sotong Bakar


           Having had the blessing to live in Indonesia as something of an upscale beach bum, I
           discovered one of life’s most decadent pastimes. What could be more indulgent than
           laying around on a pristine, white sand beach with absolutely nothing around except
           the gently lapping waves of the azure Java Sea beckoning? Add to that image the sight
           of just-caught seafood being grilled right before your very eyes. Small, whole squids
           are first marinated in a simple bath of Indonesia’s favorite sauce: sweet soy sauce.
           Then lightly sprinkled with salt before hitting a flaming grill. Barely a minute on either

           side renders the calamari super tender with finger-licking good caramelization.
