If I had to choose one aspect of Indonesian cuisine that never fails to
amaze me, it would have to be how vibrant and intense the flavors are in
their vegetable dishes. These Indonesian dishes go beyond the typical or
mundane stir-fries found in other cuisines. Hefty quantities of garlic
along with a wide array of Indonesian herbs and spices (including
shrimp paste and chili peppers) are used to flavor all types of vegetables,
including nutritious eggplant and water spinach.
