Spicy Potato Stir-fry Sambal Goreng Kentang
Before the introduction of American fast food into Indonesia, there were no such
things as French fries. Spicy Potato Stir-fry is Indonesia’s own version of French
fries, with a million times more flavor and far less guilt. Pan-roasting the potatoes
gives them the golden crisp exterior everyone loves, while lots of garlic, chili
peppers, and sweet soy sauce combine to create a savory glaze that makes mouths
water as the first scent of the dish wafts through the air. Though Indonesians typically
serve this as a side dish, I love eating it as a healthier snack alternative whenever I get
a French fry craving.
SERVES 4 AS A SIDE DISH

COOKING TIME: 13-15 MINUTES
6-8 cloves garlic, minced
1-2 bird’s-eye chili peppers or ¼-½ teaspoon dried chili flakes
