Stir-fried Water Spinach with Shrimp Paste
Kangkung Cah Terasi
Kangkung is known as water spinach in the western hemisphere. It’s not to be
confused with watercress or potato leaves, although the latter appear deceptively
similar. Water spinach is rich in anti-oxidant nutrients and essential fibers. This is one
vegetable dish that even kids in Indonesia love to eat because of the sweet soy sauce
and spicy chili. Be aware that stir-frying the shrimp paste may cause some people who
are unaccustomed to Southeast Asian cuisine to run for their lives due to the
unmistakably potent aroma.

1 lb (500 g) water spinach (kangkung) or regular spinach
1½ tablespoons oil
6-10 cloves garlic, finely minced
