3 potatoes, peeled and cubed (1½ lb/750 g)
2 tablespoons sweet soy sauce
½ teaspoon salt
1 Grind the garlic, chili peppers, and sugar into a smooth paste using a mortar and
pestle or food processor.
2 Heat a wok over high heat. Add the oil and sauté the paste until fragrant for about 1
minute. Reduce the heat to medium high.
3 Carefully place the cubed potatoes in the wok and stir-fry for 8 to 12 minutes until
the potatoes are golden and crisp on the outside.
4 Toss in the salt and sweet soy sauce, stir-frying for another minute until thoroughly
mixed. Take care to fold the potatoes over when stir-frying instead of mashing them
with the spatula. Serve as an accompaniment to a meat or poultry dish.
