Savory Cucumber Relish Acar


           Savory  Cucumber  Relish  is  a  tangy,  condiment  used  frequently  in  Indonesia  to
           accompany meat dishes and appetizers. Most often used with meat on skewer (satay)
           appetizers in addition to the traditional Indonesian peanut dressing. Savory Cucumber
           Relish can be made several days in advance. It’s best to seerve the Cucumber Relish
           in a bowl with a spoon since every one has their favorite way of eating this condiment,
           either by drizzling the marinade over their food or enjoying it as a separate dish with
           rice.




























           MAKES 3 CUPS (750 G)
           PREPARATION TIME: 10 MINUTES
           1 large cucumber, peeled and cubed


           1 medium carrot, diced

           ½ cup (125 ml) white vinegar

           1 teaspoon salt

           4 tablespoons sugar

           1 Mix all the ingredients together in a medium sized bowl until thoroughly combined
           and the sugar has dissolved.


           2 Place the Savory Cucumber Relish in either a closed jar or tightly wrapped bowl
           and refrigerate at least overnight before serving. The longer you leave the relish to
           marinate, the better it tastes. Stored properly, it can last in the refrigerator for several
           weeks.
