Cellophane Noodle Salad Selada Soun


           I’m not sure when it was exactly that my love affair with all things noodle began but I
           know it was very early on in life. My first memory of Cellophane Noodle Salad takes
           place at the Hyatt Hotel in Surabaya, Indonesia, where my family used to hold dinner
           parties with our extended relatives and friends. These parties most often took place by
           the hotel’s beautiful swimming pool with an extensive BBQ buffet. Between games of
           tag and hide and seek, I would go back to the buffet for another serving of this light
           and fresh noodle salad, unable to resist its salty, zesty flavors. Cellophane noodles,

           also  known  as  mung  bean  noodles  or  clear  noodles,  have  the  nutritional  benefit  of
           being  lower  in  calories  than  most  other  noodles  with  no  cholesterol.  This  salad’s
           lively flavors, with its dash of sesame oil, create a savory yet light dish to be enjoyed
           by itself or as a side dish to grilled meats.

           One 7-oz (200-g) packet dry cellophane noodles

           8-10 garlic cloves, finely minced
