1 red onion, thinly sliced
8 kaffir lime leaves, finely cut or ½ teaspoon freshly grated lime zest
3 tablespoons coriander leaves (cilantro), roughly chopped
2 green onions (scallions), finely chopped
3 tablespoons finely chopped mint
2 tablespoons fresh lime juice
1 teaspoon sesame oil
1 teaspoon ground coriander
5 tablespoons soy sauce
½ teaspoon ground red chili pepper
1 Soak the cellophane noodles in a large bowl in warm water for at least ½ an hour
and up to 2 hours.
2 Toss together the garlic, red onion, kaffir lime leaves, coriander leaves, green
onions, and mint in a large mixing bowl.
3 Drain the soaked noodles. Bring about 5 to 6 cups of water to a vigorous boil in a
medium sized pot. Boil the drained noodles for just about 1 to 2 minutes. Drain the
noodles once again and toss in with the other ingredients in the large mixing bowl.
4 Add in the lime juice, sesame oil, ground coriander, soy sauce, and ground red chili
peppers. Mix everything together until thoroughly combined. Serve warm or at room
temperature.
