Tomato Pie

                                    Ingredients:

                                    1 baked pie shell, 9"
                                    4 large tomatoes, peeled and sliced
                                    10 fresh basil leaves or 1½ tsp dried
                                    ½ cup onion, chopped
                                    1 cup shredded mozzarella cheese
                                    1 cup cheddar cheese
                                    1 cup mayonnaise

                                    Sprinkle tomatoes with salt. Drain for 10 minutes.
                                    Pat dry. Layer tomatoes, onions and basil in pie
                                    shell. Salt and pepper to taste. Mix cheeses and
                                    mayo. Spread over tomato, onion and basil. Bake at
                                    350°F for 30 minutes.

                                    This is yummy. People at my church always want me
                                    to bring this for potluck dinners.
