Tropical Lime Chicken

Ingredients:

4 boneless, skinless chicken breasts
3 Tbsp + 1½ tsp lime juice
1 Tbsp canola oil
⅛ tsp salt
⅛ tsp pepper

Mix lime juice, oil, salt and pepper in large plastic
bag. Add chicken turning to coat all pieces well.
Refrigerate 2-4 hours. Drain chicken. Broil or grill
until juices run clear.

Salsa:
½ cup chunk pineapple
1 medium kiwi fruit, peeled and chopped
(1 can mandarin oranges can be substituted for
kiwi)
¼ cup chopped red sweet pepper or roasted red
pepper
1 Tbsp lime juice
1 Tbsp white wine vinegar
1 Tbsp honey
½-1 tsp crushed red pepper flakes
