Chocolate Peppermint Sandwiches

                                    Ingredients:

                                    2 pkgs 18.5 oz devil's food cake mix
                                    4 eggs, lightly beaten
                                    ⅔ cup vegetable oil
                                    1 (8 oz) pkg cream cheese (softened)
                                    ½ cup butter or margarine (softened)
                                    4 cups confectioner's sugar
                                    1 tsp peppermint extract
                                    food coloring, optional
                                    vanilla

                                    Directions:
                                    Beat cake mixes, eggs and oil in bowl. Batter will
                                    be very stiff. Roll into 1-inch balls and place on
                                    ungreased baking sheet and flatten slightly. Bake
                                    at 350°F for 10 to 12 minutes or until a slight
                                    indentation remains when lightly touched. Gently
                                    remove from sheet and cool. They will be very soft
                                    and will set as they cool.

                                    In another bowl beat cream cheese and softened
                                    butter. Add sugar, vanilla, and peppermint,
                                    coloring and beat until smooth. Spread onto the
                                    bottom half of the WELL COOLED cookies. Top with
                                    remaining cookies. The centers will be soft. You
                                    may want to put them into the refrigerator while
                                    they set up for several hours. If left out in unsealed
                                    container, the chocolate cookies (not the filling)
                                    will get hard and brittle in a few hours and will be
                                    will be hard to eat.
