Dorothy's Mexican Fruit Cake

Ingredients:
2 cups sugar
2 cups flour
2 eggs
2 tsp baking soda
½ tsp salt
1 cup chopped pecans
1 (20 oz) can crushed pineapple
Put ail ingredient in bowl and mix. Bake in greased
& floured 9x13 pan that has been sprayed with
cooking spray. Bake for 35-40 minutes at 350°F.
While cake is hot punch holes in top of cake and
pour icing on.
Icing
1 (8 oz) cream cheese
½ cup butter
2 cups powdered sugar
1 tsp vanilla
2 Tbsp milk
Put all ingredient EXCEPT SUGAR in a pan and slowly
heat until butter and cream cheese is melted. Then
add sugar with liquid. Then mix with a mixer until
smooth. Spread on hot cake into holes. The icing
will be soft. The longer the cake sets, the more
moist it will get. Can't eat just one piece!
