Thunder Cake

Ingredients:

1 cup shortening
1¾ cup sugar
1 tsp vanilla
3 eggs, separated
1 cup cold water
⅓ cup pureed tomatoes
2½ cups cake flour
½ cup dry cocoa
1½ tsp baking soda
1 tsp salt

Cream together shortening, sugar and vanilla.
Blend yolks into mixture. In another bowl, beat egg
whites until stiff, then fold into creamed mixture.
Add water and tomatoes. Mix dry ingredients
together, then add to creamy mixture. Bake in two
greased and floured 8 ½" round pans at 350°F for
35-40 minutes. Frost with chocolate butter frosting.
