Mini Brunch Muffins

                                    Ingredients:

                                    Makes 48 mini brunch muffins
                                    2 cans crescent rolls
                                    2 cups chopped tomatoes (don't use really ripe
                                    tomatoes)
                                    2 cups grated Swiss cheese
                                    1 bag/bottle real bacon bits
                                    2 Tbsp mayonnaise

                                    Divide each crescent roll into 2 pieces. Spray your
                                    mini muffin pan with cooking spray. Place each
                                    piece into the mini-muffin cup. Press the crescent
                                    roll down into the cup. (This provides your crust for
                                    your filling.)

                                    Mix all other ingredients together. Fill each muffin
                                    cup to the top. Bake at 400°F for 10 minutes. Let set
                                    in pan for 3-5 minutes before removing. Continue
                                    until all the filling and crescent roll pieces are gone.
