Saffron and Truffle
Oil Risotto
Ingredients Instructions
1 tbsp Ambrosia Olive Oil 1. Pre-chop onion & set aside. Add olive &

truffle oil to a pan over medium heat & allow
1 tbsp Ambrosia Truffle Oil to warm. Add in onion & stir frequently,

until soft.
1 White Onion, chopped 2. Add the arborio rice to the pan & stir, allowing
rice & onion to cook together, stirring
4 tbsp White Wine frequently.
3 cups Low Sodium Chicken Stock 3. In a small pot over medium high heat. add
chicken stock & allow to heat thoroughly.
Once warmed, add saffron & stir.
Pinch of Ambrosia Saffron, Pure
®
4. Once rice is opaque (about 5-10 min), add in
1 ½ cups Ambrosia Arborio Rice white wine, stir & let simmer until absorbed.

½ cup Parmesan Cheese, grated 5. Add chicken stock to the rice pan. Stir &
simmer until all liquid is absorbed, stirring
frequently. Remove from heat and add
parmesan cheese, stir to coat.
6. Serve immediately. Enjoy!
Arborio Rice
Arborio rice is high in amylopectin starch, which is what gives risotto its creamy texture.
