This course is designed to introduce students to careers related to the medical field and prepares students for entry-level employment
in the medical setting. Students learn about the human body, medical terminology, assess vital signs and use health related skills
including professionalism, customer service and communications. Students are placed in community classroom sites, such as dietary,
physical therapy, surgery, patient transportation, hospital offices, medical offices, or other areas according to interests and availability.
Prerequisite: Physical exam or physical clearance and a negative TB skin test or chest x-ray required before students can be placed at
a community classroom site. Students must provide own transportation to placement site; some are within walking distance.

This course prepares students for employment as a Medical Assistant in both the administrative and clinical areas of medical facilities,
hospitals, and offices. Administrative instruction includes medical ethics and law, reception techniques, patient check-in, clerical skills,
communication skills, office automation, including computer skills for the medical facility, HIPAA regulations and medical terminology.
The clinical component includes infection control/aseptic technique, vital signs, patient assessment and charting, pharmacology,
EKG’s, nebulizers, phlebotomy and injection techniques, as well as Point of Care testing such as urinalysis and glucose testing. Students
will study the various body systems. This course may be used to fulfill 10 credits of the life science graduation requirement.
Prerequisite: Negative TB skin test or chest x-ray. Students interested in on-the-job-training (extern) must provide own transportation.
Extern sites require a background check (at student’s expense). Students must be 18 years of age to begin their externship.

Food science is the study of the production, processing, preparation, evaluation and utilization of food. The emphasis is on the physical
and chemical changes and reactions that occur in food preparation. This course uses equipment and supplies from foods and science
laboratories. Students are required to use scientific method to study biological/chemical bases of nutrition and food preparation,
preservation and processing. Valid scientific experiments are included. Students develop critical thinking skills through measuring,
recording data, graphing, predicting, evaluating and writing lab results.
This course may be used to fulfill 10 credits of the required life or physical science graduation requirement.

preservation, use of consumer resources and agencies, and the relationship of nutrition and fitness to good health. Students may also
explore careers in the food industry.
