HELEN HUBLER WRIGHT’S APPLE PIE
Ingredients
3/4 cup sugar 3/4 teaspoon cinnamon
3 tablespoon flour 5 cups peeled and sliced apples
1 ½ tablepoons butter
Instructions
Mix together sugar, flour, cinnamon and apples and put into pastry lined pie plate. Cut
butter into pieces and place on top. Add pastry crust and follow the pie crust recipe.
HELEN HUBLER WRIGHT’S BLUEBERRY PIE
Ingredients
4 cups blueberries
2 tablespoon flour
1/8 teaspoon salt
1/4 teaspoon cinnamon
1 tablespoon butter
2/3 cup sugar
1 teaspoon white vinegar
Instructions
Clean and dry the blueberries and remove any stems or leaves. Combine sugar, flour,
salt and cinnamon and mix with blueberries. Put in pie crust and sprinkle vinegar
around the blueberries. Slice butter and put around the top. Cover with crust and
follow directions from the crust recipe.
This is the summer pie I would make. It was my son, Todd’s favorite pie. The best was
when Ron, Todd and my Mom went blueberry picking on Pitcher Mountain, Stoddard,
New Hampshire on our vacation. They would bring the fresh blueberries back to me at
the cabin and I would clean some to use that day for a pie. Since we didn’t have much
room in the car, I brought Kim Christy’s children Tupperware rolling pin to roll out the
dough for the blueberry pie.
