RITA’S FUDGE
Ingredients
2 cups sugar 4 tablespoon cocoa
3/4 evaporated milk 1/2 cup regular milk
Mix together and put on stove at low heat. Using a candy thermometer, bring temp
to 260 degrees at a soft boil. Remove from stove.
ADD:
1 teaspoon vanilla extract 1-2 tablespoons butter
1/4 - 1/3 bag of marshmallows
OPTIONAL: Peanut Butter
Beat and put in greased pie plate and refrigerate to harden.
Rita Beeker McClanahan is my favorite cousin. When Rita came to Lynbrook to visit
us, she took me to Woolworth (a nickle and dime store) which had a soda fountain
area. There she introduced me to a real cherry coke soda. We would sit on the stools
and have a great time.
GEORGE G. BEEKER JR’S FUDGE
Ingredients
8 tablespoons sugar 1 cup water
1/2 cup milk 1 ounce chocolate
1/2 teaspoon vanilla 1-2 tablespoons butter
Instructions
Cook until sti then put in the vanilla and butter. Beat until the mixture begins to
sti en. Test by putting a drop of the mixture into a glass of water until a firm ball
forms to indicate that it has cooked long enough. Remove from heat and stir slowly
while placing it onto a pan or dish with high sides. Let cool and cut into squares. If it
does not harden, use as a topping for ice cream.
We always called George, “Pal”. He is Rita’s older brother.
HELEN HUBLER WRIGHT’S FUDGE
Ingredients
4 cups sugar 1 ½ cup milk
4 tablespoons cocoa 2 tablespoons butter
1/2 teaspoon salt 1 teaspoon vanilla extract
OPTIONAL: 1 cup nuts
Instructions
Combine all ingredients except vanilla and nuts. Boil until it makes a soft ball. Beat
until creamy, add vanilla and nuts. Put in a pan and cool. Cut into squares.
