Youvetsi is a traditional beef stew in a rich
        tomato sauce that's baked in a clay oven
        with delicious orzo pasta and topped with
        a heap of grated kefalotyri cheese. This
        hearty and delicious one-pot meal is the

        ultimate Greek comfort food.

           INGREDIENTS

• 2 pounds’ beef chuck cut in large cubes, about 8 pieces
• 2 cup orzo pasta
• 3 tablespoons olive oil or another vegetable oil
• 1 onion, finely chopped
• 1 large leek, chopped
• 1 carrot, grated
• 1 cup dry red or rose wine
• 2 bay leaves
• 3 allspice kernels
• 3 cloves
• 1 cinnamon stick, about 1 1/2 – 2 inches’ long
• 1/4 cup tomato paste
• 2 cups pureed tomatoes
• 2 teaspoons sugar
• 1 cup beef broth or water
• Salt and freshly grated pepper to taste
