Manchego – Sheep’s Milk Cheese
Produced in the LaMancha region of Spain from pasteurised Manchega Sheeps Milk. Aged for 6 months, the
traditional use of grass moulds leaves a distinctive, characteristic zig zag pattern on the rind. The top and bottom
surfaces are pressed with a design of an ear of wheat. A semi firm, compact cheese, ivory yellow colour, with a
sweet and nutty flavor and an intense aroma. The rind also has the markings/stamp of approval of the DP
(Denominaciόn de Origen) stating that the cheese has been granted Protected Designation of Origin status by the
Spanish and European Union.
