Gorgonzola Dolce – produced with whole cow's milk and a selection of molds and
milk enzymes are added to create the blue-green marbling. Has a strong bouquet
smell and creamy sweet flavour.
Parmigiano Reggiano – has an intense taste that is nutty, sweet and creamy. It is a
highly concentrated cheese containing only 30% water with an aging time of twenty
four months. Perfect for grating, shaving or cubing.
Grana Padano – is a semi-fat hard cheese, cooked and then ripened for nine to
sixteen months. It has a creamy yet slightly grainy texture and mild flavour making it
one of the Europe’s most popular cheeses. Perfect for grating, shaving or cubing.
Pecorino Romano – produced from fresh whole sheep's milk. The cheese is compact
and white with a touch of straw-yellow colour. Best known for its slightly sharp flavour.
Provolone – is an Italian all-purpose cheese made from cow’s milk. It has a low melting
point making it perfect for melting in subs and toasties. Dolce (sweet) is aged for 2-3
months and has an almost white colour. A semi firm texture and mild sweet taste.
