BRIE & CAMEMBERT
Creamy textured, soft ripened cheese. Produced using a traditional method and matured for four to five weeks. After
ripening the bloomy rind becomes slightly resilient when pressed. Best served at room temperature, the rind is meant
to be eaten with the cheese.
Brie – during the cheese making process, cream is added resulting in 60 percent milk fat. With a light buttery scent and
flavour, a pale cream coloured center with a greyish tinge under the natural bloomy rind. Brie is considered a lovely
dessert cheese and a mild all-rounder.
Camembert – is only 45 percent milk fat but has stronger lactic starters as they are introduced into the rind several
times during maturation. This contributes to a stronger flavour, earthy smell and pale yellow interior. As Camembert
matures longer it becomes gooier and stronger in flavour. Can be paired with both sweet and savory.
