To bake and mash a sweet potato, preheat the oven to 375°F. Prick
                the sweet potato a few times with a fork, then bake as you would a
                regular potato, for approximately 1 hour. Let it cool slightly, and then

                squeeze the flesh from the sweet potato, discarding the skin. With a
                hand masher or a fork, mash the potato until almost smooth. About 4
                medium sweet potatoes yield 2 cups mashed.
