1 Preheat oven to 375°F. Grease a baking sheet and set aside.
2 To make the pizza sauce, combine all sauce ingredients in a small
saucepan over medium-high heat. Bring to a boil, stirring
continuously. Reduce heat to low and allow to simmer for 5 minutes,
stirring occasionally. Remove from heat and set aside.
3 To make the pinwheels, roll the puff pastry into a 10-inch square on
a lightly floured surface and apply pizza sauce, spreading evenly but
leaving 1 inch of the pastry exposed on 1 side. Sprinkle on the diced
pepperoni slices and cheese, maintaining the exposed edge.
4 Brush exposed edge with egg wash and roll pastry into a tight
spiral toward the washed edge. Just before completing the spiral,
brush egg wash on the side of the spiral about to touch the exposed
edge. Finish rolling so that the two washed edges meet. Press to
adhere.
5 Slice the rolled pastry into 10 disks about 1 inch thick and place on
the greased baking sheet. If the disks get slightly squashed while
cutting, gently press them back into a circle shape.
6 Bake for 15 to 20 minutes until pastry is puffed and golden.
Transfer to a serving plate.
