Makes 40 apple bites

What better way to start a Narnian feast than with food from the creation of Narnia: apples!
This easy appetizer offers a perfect balance of flavors: tart apple, creamy cheese,
herbaceous thyme, and sweet honey.
INGREDIENTS
1 Honeycrisp apple
1 Granny Smith apple
1 pomegranate
4 ounces goat cheese
2 teaspoons milk
3–4 sprigs fresh thyme
Honey
INSTRUCTIONS
1 Core the apples and cut into ½-inch-thick slices and set aside. Cut
the pomegranate in half and place in a large bowl of water. Peel
inside the bowl (this helps prevent juice stains). Strain out seeds and
set aside. Pinch the end of a sprig of thyme and slide fingers
downward to remove leaves. Repeat with remaining sprigs. Discard
stems and set leaves aside.
2 In a medium bowl, beat the goat cheese with a hand mixer on
medium speed until crumbled. Add milk, beating until the mixture is
smooth and spreadable.
3 Spread approximately ½ teaspoon goat cheese on each slice of
apple. Sprinkle pomegranate seeds onto each apple. Sprinkle thyme
leaves on the apple slices and top with a small drizzle of honey.
