                               Red potato Salad




                                         Ingredients

               2 lbs chopped & roasted red potatoes
               4 hard boiled eggs sliced
               1 juice of lime
                1 tbsp garlic
               1 tbsp mustard
               ½ cup green onion
               ½ lb bacon
               1 cup red onion
               1 tbsp dill
               1 cup chopped celery
               1 cup mayonnaise
                Paprika


                                         Lagniappe




               Toss the potatoes in oil and roast at 350 till done and slightly golden (about
               30 minutes)

                Remove from oven and mix with the onions, eggs, bacon, dill and celery.

               In a blender mix the lime juice, garlic, mustard and green onions with the
               mayonnaise till you get a puree sauce the consistency you like.

               Blend the puree with the potato mixture and sprinkle with some paprika

               Chill for a few hours and serve
