Linda Rae’s Corn salad



                                         Ingredients


               8 ears fresh corn
               1 diced red bell pepper
               Hot sauce
               1 diced green bell pepper
               1 red onion chopped
               1 tsp white sugar
               ½ cup chopped cilantro
               ½ cup olive oil
               Salt & pepper
               4 cloves minced garlic
               3 limes juice
                                         Lagniappe

               Let corn soak in a large pot of sugar water for 30 minutes prior to grilling.

               Grill the corn with the husks on for around 20 minutes or until tender.

               Cut the corn from the cob and place in a medium bowl.  Mix in the peppers
               and red onion.

                In a blender or food processor, mix the cilantro, olive oil, garlic, lime juice,
               sugar, salt, pepper and hot sauce.  Blend until smooth and stir into the corn
               mixture.  Allow to set a few hours prior to serving\
