Secret Gumbo Stocks
The real secret to any gumbo is the base or the stock used to prepare the soup. While
there are hundreds of variations of gumbo, these stocks will work for any of them.
Chicken Gumbo Stock
4 lbs whole chickens 2 large onions sliced
2 large cloves 3 celery rib
1 carrot peeled & sliced ½ cup white wine
4-8 sprigs parsley 6-8 pepper corns
1 bay leaf 1 tsp salt
8-10 cups chicken broth 1 tsp black pepper
Place all ingredients into a large stock pot with 1 gal of water or chicken broth and
bring to a boil and simmer for about 1 hour. Remove the chicken and set aside,
strain the liquid into a large container and cool for use in your gumbo later. If the
stock is not strong enough for you add some chicken base or bouillon cubes till it has
a chicken soup like taste.

Seafood Gumbo Stock
2 large onions chopped into large pieces 2 tsp Rosemary
3 cloves garlic 6 bay leaves
3 stalks celery 8-10 cups water
1 tsp paprika 3 Blue Crabs
2tsp salt Shrimp heads and shells
4-6 Cubes shrimp bouillon
Add all the ingredientes to a large stock pot and bring to a boíl. Simmer for about 1
hour. Strain and reserve the liquid reserving the crabs for your gumbo. This stock
should have a strong seafood flavor when done.

Shrimp Gumbo Stock
Left over shrimp heads and shells 8-10 cups quarts water
2 onions halved 4-6 cubes shrimp bouillon
4 bay leaves
1 tbsp thyme
¼ tsp cayenne
2 tbsp Old Bay seasoning
2 lemons halved and squeezed
Add all ingredients to a large stock pot and bring to a boil. Simmer for about 1 hour
and strain into another container and reserve it as the base for your seafood gumbo
